  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • 1 tsp seasoned salt

  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce with a fork. Bake directly on oven rack for 45-60 minutes until tender.
  2. Cool slightly, then cut each potato in half lengthwise and scoop out most of the flesh, leaving a ¼-inch shell.
  3. In a bowl, mix scooped potato flesh with cheddar cheese, sour cream, green onions, and seasoned salt until smooth.
  4. Fill each potato skin with the mixture, packing tightly. Place on a baking sheet and bake for another 15-20 minutes until golden.
  5. Garnish with sliced black olives to create spooky eyes before serving.
