  • 1 lb ground beef (80/20)
  • 8 slices thick-cut bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup bourbon BBQ sauce
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 1/4 cup finely chopped onion
  • Sliced pickles (to taste)
  • Fresh lettuce (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, chopped onions, breadcrumbs, egg, and half of the bourbon BBQ sauce. Mix until just combined.
  3. Shape the mixture into golf ball-sized meatballs. Wrap each meatball with a slice of bacon and secure with toothpicks if needed.
  4. Place the meatballs on the baking sheet and brush them with remaining BBQ sauce. Bake for 25-30 minutes until cooked through.
  5. Remove from the oven, sprinkle cheese on top of each meatball, and bake for an additional 5 minutes until melted.
  6. Serve warm, garnished with lettuce and sliced pickles.
