  • 1 lb boneless, skinless chicken thighs
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 2 stalks lemongrass, bruised
  • 4 cups chicken broth
  • Salt to taste
  • Fresh cilantro for garnish
  • Sliced red chili peppers for garnish (optional)

Instructions

  1. Finely chop the garlic and ginger. Bruise the lemongrass stalks with a knife to release their oils.
  2. In a large pot over medium heat, add 1 tbsp oil. Once hot, add chicken thighs and cook until browned on both sides (5-7 minutes).
  3. Pour in coconut milk and chicken broth; add garlic, ginger, and bruised lemongrass. Bring to a gentle simmer.
  4. Let it simmer on low heat for about 20 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it using two forks, return it to the pot along with any accumulated juices.
  6. Adjust seasoning with salt if needed. Serve hot in bowls garnished with cilantro and red chili slices.
