Ingredients

  • 2 cups heavy cream
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 23 medium-sized sweet potatoes, sliced into 1/4-inch rounds
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon fresh or dried thyme (optional)

Instructions

  1. In a saucepan over medium heat, melt the butter.
  2. Add minced garlic and sauté until fragrant.
  3. Pour in heavy cream and stir in salt and pepper until well combined.
  4. Preheat your oven to 375°F (190°C).
  5. Grease a baking dish with nonstick cooking spray or butter.
  6. Layer half of the sweet potato slices in the prepared dish.
  7. Pour half of the creamy sauce over the sweet potatoes.
  8. Repeat with remaining sweet potato slices and sauce.
  9. Sprinkle shredded cheddar cheese evenly over the top layer.
  10. Bake uncovered for about 45 minutes or until golden brown and bubbly.
