  • 2 medium acorn squashes
  • 6 oz brie cheese, diced
  • 1 cup dried unsweetened cranberries
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut each acorn squash in half lengthwise and scoop out the seeds. Drizzle olive oil inside each half and season with salt and pepper. Place cut-side down on the baking sheet.
  3. Roast the squash for 25-30 minutes or until tender.
  4. While roasting, mix diced brie, cranberries, and thyme in a bowl.
  5. Once the squash is tender, flip them over and fill each half generously with the brie mixture. Return to the oven for another 10-15 minutes until cheese is melted.
  6. Let cool slightly before serving; garnish with extra thyme if desired.
