  • 2 medium sweet potatoes (about 1 lb), peeled and sliced into ½-inch rounds
  • 2 tbsp extra virgin olive oil
  • 3 tbsp honey
  • ½ cup crumbled feta cheese
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes. Slice them into rounds about half an inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper, ensuring they have space between them.
  5. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and tender.
  6. Remove from the oven, drizzle warm honey over each round, and sprinkle crumbled feta on top while still hot.
  7. Transfer to a serving platter and garnish with fresh herbs if desired.
