2 tbsp extra virgin olive oil
3 tbsp honey
½ cup crumbled feta cheese
Salt and pepper to taste

Instructions
Preheat the oven to 425°F (220°C).
Wash and peel the sweet potatoes. Slice them into rounds about half an inch thick.
In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper, ensuring they have space between them.
