  • 2 cups Butternut Squash, diced
  • 12 medium-sized Leeks, sliced thinly
  • 3 tablespoons Olive Oil, extra virgin
  • Salt, to taste
  • Pepper, to taste
  • A handful of Fresh Thyme, optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, coat the chicken thighs with olive oil, salt, and pepper until well-covered.
  3. Dice the butternut squash into bite-sized pieces and slice the leeks thinly. Combine in a baking dish with olive oil, salt, pepper, and thyme. Stir gently until coated.
  4. Nestle the seasoned chicken thighs among the vegetables in the baking dish.
  5. Roast in the preheated oven for 35-40 minutes or until the chicken's internal temperature reaches at least 165°F (75°C) and veggies are tender.
  6. Remove from oven and let rest for five minutes before serving. Drizzle pan juices over each serving for added flavor.
