  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 3 tbsp unsalted butter
  • 1 can (15 oz) tomato puree
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tsp garam masala
  • 1 tsp red chili powder
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces, season with salt and pepper.
  2. In a large skillet over medium heat, melt 2 tbsp butter and cook the chicken until golden brown (5-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, melt the remaining butter, add garlic and ginger; sauté for about one minute until fragrant.
  4. Stir in tomato puree and coconut milk; bring to a gentle simmer while scraping any browned bits from the bottom.
  5. Add garam masala and red chili powder; mix well. Return chicken to the skillet and simmer on low for 10-15 minutes until flavors meld.
