  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 cup pumpkin puree (canned or homemade)
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Mix in pumpkin puree and vanilla until smooth.
  5. Gradually combine dry ingredients with wet ingredients until just blended.
  6. Gently fold in chocolate chips and mini marshmallows.
  7. Scoop tablespoon-sized balls of dough onto prepared sheets, spacing them two inches apart.
  8. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on wire racks.
