  • 1 large egg
  • 1 tsp baking soda
  • 2 tsp chai spice mix (cinnamon, cardamom, ginger, cloves)
  • 1/4 tsp salt
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Together Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about three minutes.
  3. Add Egg and Pumpkin: Mix in the egg and pumpkin puree until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, chai spice mix, and salt. Gradually add this mixture to the wet ingredients and stir until just combined.
  5. Fold in Optional White Chocolate Chips: If using, gently fold in the white chocolate chips.
  6. Bake: Scoop tablespoon-sized balls of dough onto the prepared baking sheets about two inches apart. Bake for 10-12 minutes or until edges are lightly golden but centers remain soft. Let cool on the sheet for five minutes before transferring to wire racks.
