  • 1 lb lean ground beef
  • 1 cup canned pumpkin puree
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 (28 oz) can crushed tomatoes
  • 1 cup low-sodium beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • ½ cup red wine (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté onion, garlic, carrots, and celery until softened (about 5 minutes).
  2. Add ground beef; cook until browned (7–10 minutes), breaking it apart with a wooden spoon.
  3. Stir in pumpkin puree and crushed tomatoes until well combined.
  4. Pour in beef broth and red wine (if using). Scrape any browned bits from the bottom of the pot.
  5. Add oregano, basil, thyme, salt, and pepper. Stir to combine.
  6. Bring to a gentle simmer; cover partially and cook for at least 30 minutes until thickened.
  7. Serve hot over pasta or with crusty bread.
