  • 2 cups low-fat cottage cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup pizza sauce
  • 2 tsp Italian seasoning
  • 1 cup chopped bell peppers (mixed colors)
  • 1 cup sliced mushrooms
  • ½ cup sliced black olives

Instructions

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish.
  2. In a bowl, mix cottage cheese, half of the mozzarella, Italian seasoning, salt, and pepper.
  3. Spread half of the mixture in the baking dish. Layer with bell peppers and mushrooms, then top with pizza sauce.
  4. Add remaining cottage cheese mixture on top of the sauce and sprinkle with black olives and remaining mozzarella.
  5. Bake for 30-35 minutes until golden brown. Let cool slightly before serving.
