  • 1/4 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1/2 tsp pink food coloring (gel)
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly spray it with nonstick cooking spray.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix eggs, vegetable oil, vanilla extract, pink food coloring, and water until smooth. Gradually add this mixture to the dry ingredients and stir until just combined.
  4. Pour the batter into the prepared pan and spread it evenly. Bake for about 15-20 minutes or until a toothpick comes out clean.
  5. Once baked, remove from the oven and place a clean kitchen towel over it while still warm. Flip it onto a cooling rack, gently peel off the parchment paper, and roll it up with the towel inside. Let it cool completely.
  6. In a mixing bowl, combine softened cream cheese with powdered sugar and heavy cream. Beat until fluffy and smooth.
  7. Once cooled, unroll your cake gently and spread the cream cheese filling evenly across its surface. Roll it back up without the towel.
  8. Slice into pieces and serve on a beautiful platter.
