  • 8 oz spaghetti or penne
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh basil leaves
  • 1/3 cup pine nuts, toasted
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Halve cherry tomatoes and place on a baking sheet. Drizzle with olive oil, seasoning with salt and pepper.
  2. Roast tomatoes for 20-25 minutes until tender and caramelized.
  3. Boil salted water in a large pot, add pasta, and cook until al dente. Reserve 1/2 cup pasta water before draining.
  4. In a food processor, blend basil, pine nuts, garlic, Parmesan, and olive oil until smooth. Adjust consistency with reserved pasta water if needed.
  5. Toss drained pasta with pesto in a large bowl; gently fold in roasted tomatoes.
  6. Serve hot, garnished with extra Parmesan if desired.
