  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Prepare Your Persimmons: Peel and mash the ripe persimmons until smooth.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Cream Sugars and Butter: In a large bowl, cream together softened butter with both sugars until light and fluffy (about three minutes).
  5. Combine Mixtures: Gradually add the mashed persimmons to the creamed mixture. Slowly mix in the dry ingredients until just combined.
  6. Scoop and Bake: Using a cookie scoop or tablespoon, drop spoonfuls onto the prepared baking sheets, leaving space between them. Bake for 12-15 minutes or until edges are golden brown.
