  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup low-sodium soy sauce
  • 1/2 cup brown sugar
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh ginger, grated
  • 1/2 cup pineapple juice
  • 2 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, garlic, ginger, and pineapple juice until smooth.
  2. Marinate the chicken: Place chicken in a resealable bag or shallow dish, pour half the marinade over it, seal, and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F.
  4. Remove chicken from marinade, discarding excess liquid. Grill for about 6-7 minutes on each side until cooked through (internal temperature of 165°F). If baking, cook for about 25-30 minutes.
  5. In a small saucepan over medium heat, bring reserved marinade to a simmer. Stir in cornstarch mixture to thicken sauce.
  6. Serve grilled chicken with thickened sauce drizzled on top.
