  • 4 mini pumpkins (about 1 lb each)
  • 1 cup sliced pepperoni
  • 2 cups shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • ¼ cup fresh basil leaves (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice off the tops of the pumpkins and scoop out the insides, removing seeds and stringy pulp.
  3. In a bowl, mix together the shredded mozzarella, sliced pepperoni, marinara sauce, and Italian seasoning until well combined.
  4. Spoon the filling into each hollowed pumpkin until generously filled. Place them upright on the baking sheet.
  5. Bake for 25-30 minutes or until the pumpkins are tender and cheese is bubbly.
  6. Remove from the oven and garnish with chopped fresh basil before serving hot.
