  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg, at room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup crushed candy canes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy (about three minutes).
  4. Add the egg, vanilla extract, and peppermint extract to the creamed mixture. Beat until well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in chocolate chips (and crushed candy canes if using).
  6. Drop rounded tablespoons of dough onto prepared sheets about two inches apart. Bake for about ten minutes until edges are set but centers remain soft.
  7. Allow cookies to cool slightly on the baking sheets before transferring to plates.
