- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg, at room temperature
- 1 tsp pure vanilla extract
- 1 tsp peppermint extract
- 1 cup semi-sweet chocolate chips
- 1/4 cup crushed candy canes (optional)
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

- In another bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy (about three minutes).
- Add the egg, vanilla extract, and peppermint extract to the creamed mixture. Beat until well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in chocolate chips (and crushed candy canes if using).
- Drop rounded tablespoons of dough onto prepared sheets about two inches apart. Bake for about ten minutes until edges are set but centers remain soft.
