Nando’s Portuguese Chicken & Rice is a vibrant dish featuring juicy, marinated chicken grilled to perfection and served over flavorful rice, bringing a taste of Portugal to your table.

  • 46 boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 3 tbsp freshly squeezed lemon juice
  • 2 tbsp olive oil
  • 1 cup long grain rice
  • 2 cups chicken broth

Instructions

  1. In a large mixing bowl, combine minced garlic, smoked paprika, cayenne pepper, lemon juice, and olive oil.
  2. Add the chicken thighs and coat them thoroughly in the marinade. Let them marinate for at least one hour.
  3. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  4. Rinse the long grain rice under cold water until it runs clear.
  5. In a medium pot over medium heat, combine the rinsed rice and chicken broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 15-20 minutes.
  7. Once cooked, remove from heat and let sit covered for five minutes. Fluff with a fork and season with salt or additional lemon juice if desired.
