Ingredients
Scale
8 oz steak (sirloin or ribeye)
4 cups mixed greens (arugula, spinach, romaine)
1/2 cup cherry tomatoes (halved)
1/3 cup gorgonzola cheese (crumbled)
1/4 cup balsamic vinegar
2 tbsp olive oil
Salt and pepper (to taste)
Instructions
Season the steak generously with salt and pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes per side until it reaches your desired doneness.
Remove the steak from heat and let it rest for at least five minutes to allow juices to redistribute.
While the steak rests, wash and dry mixed greens. Halve cherry tomatoes and crumble gorgonzola cheese.
In a small bowl, whisk together balsamic vinegar and olive oil until combined. Adjust seasoning with salt and pepper.
In a large bowl, combine mixed greens, sliced tomatoes, and crumbled gorgonzola cheese. Thinly slice the rested steak against the grain and layer it on top.
Drizzle your homemade dressing over the salad just before serving. Toss gently to coat everything evenly without crushing the greens.
