  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup white or yellow miso paste
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together miso paste, soy sauce, honey or maple syrup, minced garlic, grated ginger, and sesame oil until smooth.
  3. Place the chicken in a resealable bag or shallow dish and pour half of the marinade over it. Ensure the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes.
  4. Arrange the marinated chicken in the prepared baking dish and drizzle with remaining marinade. Bake for 25-30 minutes until cooked through (internal temperature should reach 165°F).
  5. For extra caramelization, broil on high for an additional 2-3 minutes.
  6. Let rest for a few minutes before serving with steamed rice or vegetables.
