  • 4 tbsp unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 2 large eggs (room temperature)

Instructions

  1. Preheat oven to 325°F (160°C) and prepare a mini muffin tin with liners.
  2. In a bowl, combine crushed cookies and melted butter; press into the bottom of each muffin liner to form a crust.
  3. In another bowl, beat cream cheese until smooth; gradually add sugar and cocoa powder, mixing well. Add eggs one at a time and vanilla extract; blend until combined.
  4. Spoon the filling over the crusts, filling each about three-quarters full.
  5. Bake for 18-20 minutes until set around edges but slightly jiggly in the center.
  6. Cool at room temperature then refrigerate for at least two hours before serving.
