4 boneless, skinless chicken breasts
4 cloves fresh garlic, minced
1/4 cup freshly squeezed lemon juice
2 tsp dried oregano
1/4 cup extra virgin olive oil
2 bell peppers (any color), sliced
2 tbsp balsamic vinegar
Instructions
Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick spray.
In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, and balsamic vinegar until well combined.
Place chicken breasts in a zip-top bag or shallow dish. Pour marinade over them and let marinate for at least 30 minutes.
