  • 4 medium Russet potatoes
  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1 avocado, sliced or 1/2 cup guacamole
  • 1 cup pico de gallo

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes thoroughly, then poke holes in them with a fork.
  3. Place the potatoes directly on the oven rack and bake for about 45-60 minutes until tender.
  4. While the potatoes are baking, heat a skillet over medium heat.
  5. Add the ground beef or turkey and cook until browned, breaking it apart as it cooks.
  6. Stir in taco seasoning according to package instructions.
  7. Once the potatoes are done baking, slice them open lengthwise and fluff the insides with a fork.
  8. Spoon in the seasoned meat and top generously with shredded cheese to melt.
  9. Finish by adding sour cream, diced avocado or guacamole, chopped green onions, and pico de gallo.
