Ingredients

Scale
  • 1 bone-in lamb shoulder or leg (46 lbs)
  • 6 garlic cloves, minced
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • A handful of fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Your Lamb: Pat dry the lamb with paper towels. Season generously with salt and pepper all over.
  3. Create Your Flavor Mix: In a bowl, combine minced garlic, chopped rosemary, olive oil, and lemon juice.
  4. Massage the Lamb: Rub the garlic-rosemary mixture all over the lamb to ensure maximum flavor infusion.
  5. Roast the Lamb: Place the seasoned lamb in a roasting pan, adding any remaining garlic and rosemary around it. Roast for approximately 1 hour 30 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare.
  6. Rest Before Slicing: Remove from oven and let rest for at least 15 minutes before slicing to retain juiciness.
  7. Serve: Drizzle with pan juices and enjoy alongside roasted vegetables or creamy mashed potatoes.
