  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup panko breadcrumbs
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, garlic, ginger, green onions, panko breadcrumbs, salt, and pepper until well combined.
  3. Shape the mixture into small meatballs (about 1 inch) and place on the prepared baking sheet.
  4. Toss bell peppers, broccoli, and carrots in olive oil, salt, and pepper; spread on another baking sheet.
  5. Bake both trays for about 20 minutes until meatballs are cooked through (160°F internal temperature) and vegetables are tender.
  6. Meanwhile, whisk together soy sauce, honey, and sesame oil in a small bowl. Drizzle over meatballs before serving.
