  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar (or brown sugar)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 large egg (room temperature)
  • 1/3 cup unsalted melted butter

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In another bowl, mash bananas and mix in melted butter, sugar, and egg until smooth.
  4. Pour the wet mixture into the dry ingredients; stir gently until just combined.
  5. For the cinnamon swirl, mix sugar and cinnamon in a small bowl. Pour half of the batter into the pan, sprinkle half of the cinnamon-sugar mixture, then add remaining batter and top with more cinnamon-sugar.
  6. Bake for about 60 minutes or until a toothpick comes out clean. Cool for 10 minutes in the pan before transferring to a wire rack.
