  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup plain Greek yogurt
  • 4 cloves garlic, minced
  • 2 tbsp grated ginger
  • 1 cup tomato puree
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 2 tbsp oil (for cooking)
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt to taste

Instructions

  1. Marinate the chicken by mixing Greek yogurt, garlic, ginger, garam masala, cumin, coriander, and salt in a bowl. Add the chicken and coat well. Cover and refrigerate for at least an hour or overnight.
  2. Heat oil in a skillet over medium-high heat. Sear the marinated chicken for about 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add oil if needed and sauté chopped onions until translucent. Stir in additional garlic and ginger before adding tomato puree and salt.
  4. Simmer on low heat for about 10 minutes until thickened.
  5. Return the chicken to the skillet along with any juices. Pour in heavy cream and stir well. Simmer gently for another 5 minutes.
  6. Serve garnished with fresh cilantro alongside basmati rice or naan.
