  • 8 oz whole wheat pasta (penne or rotini)
  • 2 ears fresh corn, grilled and kernels removed
  • 1 cup diced bell peppers (mixed red, yellow, green)
  • ½ cup chopped fresh cilantro
  • 1 medium ripe avocado, cubed
  • ¼ cup freshly squeezed lime juice
  • ½ cup plain Greek yogurt
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Grill or roast the corn on the cob until slightly charred. Allow to cool, then cut off the kernels.
  3. Dice bell peppers and chop cilantro while waiting for the corn to cool. Cube avocado into bite-sized pieces.
  4. In a small bowl, whisk together Greek yogurt, lime juice, chili powder, salt, and pepper until smooth.
  5. In a large mixing bowl, combine cooked pasta, corn kernels, chopped vegetables, and cilantro. Pour dressing over salad mixture and toss gently until well coated.
  6. Transfer to a serving platter or individual bowls; garnish with extra cilantro if desired.
