  • 30 ounces frozen hash browns
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 medium onion, chopped
  • ¼ cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9×13-inch baking dish with nonstick cooking spray.
  3. In a skillet over medium heat, melt 2 tablespoons of butter and sauté the chopped onion until soft and fragrant, about 5 minutes.
  4. In a large bowl, combine frozen hash browns, sautéed onions, cream of chicken soup, sour cream, half of the cheddar cheese, and melted butter. Stir until well mixed.
  5. Pour the mixture into the prepared baking dish, spreading it evenly. Top with remaining cheddar cheese. Bake uncovered for 45-50 minutes or until bubbly and golden brown.
  6. Allow the casserole to cool slightly before serving. Scoop generous portions onto plates and enjoy!
