1 pound fresh or frozen gnocchi
4 slices thick-cut bacon
1 cup freshly grated Parmesan cheese
4 large egg yolks
1/2 cup heavy cream
Freshly ground black pepper, to taste
Salt, to taste (use sparingly)
Instructions
In a large pot of salted water, bring to a boil. Add gnocchi and cook until they float to the surface, approximately 2-3 minutes. Drain and reserve about half a cup of pasta water.
In a large skillet over medium heat, cook bacon until crispy, about 5-7 minutes. Remove from skillet and drain on paper towels, leaving some fat in the pan.
In a bowl, whisk together egg yolks, heavy cream, grated Parmesan cheese, and plenty of black pepper until smooth.
Add cooked gnocchi directly into the skillet with reserved bacon fat over low heat. Slowly pour in your creamy mixture while tossing gently until well-coated. If needed, add reserved pasta water for desired consistency.
Crumble crispy bacon back into the skillet and mix into the sauce.
Plate your gnocchi generously topped with additional Parmesan and black pepper.
