  • 1 tsp baking soda

  • 1 cup powdered sugar
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream together butter and brown sugar until fluffy. Beat in egg, then mix in molasses and vanilla.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. Drop dough by tablespoon onto prepared sheets, flatten slightly.
  6. Bake for 10-12 minutes until edges are firm but centers look slightly underbaked. Cool on wire racks.
  7. For the filling, beat cream cheese and powdered sugar until smooth. Spread between cookies.
