6 cups stale bread, cubed (sourdough or baguette)
1/2 cup unsalted butter, melted
1 medium onion, finely chopped
1 cup celery, diced
2 tablespoons fresh sage, chopped
2 cups low-sodium chicken broth
2 large eggs, beaten

Instructions
Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick spray.
In a large skillet over medium heat, melt the butter. Add the chopped onion and diced celery; sauté until softened and fragrant (about 5 minutes).
In a large bowl, combine the cubed stale bread. Pour the sautéed onion and celery mixture over the bread and toss well to coat.
Pour the chicken broth over the bread mixture and toss again until all pieces are moistened. Add the chopped sage and mix thoroughly.
In another bowl, beat the eggs until frothy. Stir them into the bread mixture along with salt and pepper to taste. Mix until well combined.
Scoop generous portions of the stuffing mixture into the prepared muffin tin. Bake for about 25-30 minutes or until golden brown on top. Allow to cool slightly before serving.
