  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tbsp berbere spice blend
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  3. Add berbere spice blend and cook for an additional minute.
  4. Pour in rinsed split peas and vegetable broth. Bring to a boil, then reduce heat to low and simmer uncovered for 30-35 minutes, stirring occasionally.
  5. Blend part of the stew with an immersion blender for creaminess while leaving some whole peas intact.
  6. Taste and adjust seasoning; serve warm with injera or rice.
