4 tbsp unsalted butter, melted
8 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1 large egg
2 cups tart apples (such as Granny Smith), peeled and chopped
1 tsp cinnamon
2 tbsp granulated sugar
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, combine graham cracker crumbs and melted butter until well mixed.
Press the mixture into muffin tins lined with paper liners to form crusts.
In another bowl, beat softened cream cheese until smooth.
Add sugar and vanilla extract; mix well before incorporating eggs one at a time until fully blended.
Spoon the cheesecake mixture evenly over each crust in your muffin tins.
While cheesecakes bake, toss chopped apples with cinnamon and sugar.
Sauté in a pan over medium heat until tender, about five minutes.
