Ingredients
Scale
2 cups all-purpose flour
1 cup canned pumpkin puree
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, room temperature
1 large egg
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
Instructions
Preheat Your Oven: Preheat to 350°F (175°C). Line two baking sheets with parchment paper.
Cream Butter and Sugars: In a large bowl, beat together the unsalted butter, brown sugar, and granulated sugar until light and fluffy (about three minutes).
Add Pumpkin and Egg: Mix in the canned pumpkin puree and egg until well combined.
Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet ingredients while mixing on low speed until just combined.
Scoop Dough: Using a cookie scoop or two spoons, drop spoonfuls of dough onto the prepared baking sheets about two inches apart.
Bake Cookies: Bake for about 10 to 12 minutes or until edges are golden brown. Allow them to cool on the baking sheet for five minutes before transferring to wire racks to cool completely.
