  • 28 oz canned diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced

Instructions

  1. Sauté Aromatics: In a large pot over medium heat, add a drizzle of olive oil and sauté the minced garlic until fragrant, about one minute.
  2. Add Tomatoes: Pour in the canned diced tomatoes with their juices. Stir and let them cook for two minutes to blend flavors.
  3. Pour in Broth: Add four cups of vegetable broth to the pot and bring to a gentle simmer for about five minutes.
  4. Toss in Tortellini: Add the cheese tortellini to the pot and cook according to package instructions, usually three to five minutes, until tender.
