4 cups day-old brioche or challah bread cubes
3 large eggs
1/2 cup whole milk (or almond/oat milk)
2 tsp ground cinnamon
1 tsp pure vanilla extract
1/2 cup brown sugar
4 tbsp melted butter
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish with nonstick spray or butter.
In a large mixing bowl, whisk together eggs, milk, cinnamon, and vanilla until well combined.
Add bread cubes to the egg mixture and gently fold until coated. Let sit for about 10 minutes to soak up flavors.
In another bowl, mix brown sugar and melted butter until crumbly.
Transfer half of the soaked bread into the prepared baking dish. Sprinkle half of the brown sugar mixture over it. Add remaining bread on top followed by the rest of the topping.
Bake for 25-30 minutes until golden brown and puffed up. Serve warm with icing or maple syrup if desired.
