  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa (mild or spicy)
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced bell peppers (optional)
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 4 large flour tortillas (whole wheat for added nutrition)
  • 1/2 cup sour cream
  • Sliced avocado or guacamole
  • Additional salsa for topping

Instructions

  1. In a medium bowl, combine black beans, shredded cheese, salsa, chopped cilantro, diced bell peppers (if using), cumin, and chili powder. Mix until well combined.
  2. Warm each tortilla in a skillet over medium heat for about 30 seconds on each side until pliable.
  3. Place about half a cup of the filling mixture onto each tortilla. Roll tightly from one end while tucking in both sides to secure the filling.
  4. For an extra crispy finish, return rolled burritos seam-side down to the skillet over medium heat for about 3–4 minutes until golden brown.
  5. Serve your beautifully browned burritos topped with additional salsa and sour cream as desired. Enjoy!
