  • 3 cups butternut squash (peeled and cubed)
  • 1 medium yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender.
  3. 3. Boil salted water in a large pot. Cook penne according to package instructions until al dente; drain, reserving some pasta water.
