8 oz pasta (fettuccine or spaghetti)
8 oz fresh oyster mushrooms, sliced
1 cup heavy cream
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tbsp olive oil
Salt and pepper to taste
Fresh herbs (basil or parsley) for garnish
Instructions
Clean the oyster mushrooms under cold water and slice them into thick pieces.
Bring a large pot of salted water to boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant. Add sliced oyster mushrooms and cook until golden brown and soft.
Pour in heavy cream and stir well, allowing it to simmer gently. If needed, add reserved pasta water to achieve desired creaminess. Stir in grated Parmesan cheese until melted and smooth.
Add the drained pasta to the skillet with the creamy mushroom sauce. Toss until evenly coated. Adjust seasoning with salt and pepper if necessary.
