  • 1/2 cup unsalted butter, softened
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 2 bell peppers (any color), cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Prepare the Marinade: In a bowl, combine softened butter, minced garlic, lemon juice, chopped parsley, chives, and soy sauce. Mix until well incorporated.
  2. Marinate the Chicken: Toss the chicken pieces in the marinade until evenly coated. Cover with plastic wrap and refrigerate for at least one hour or overnight for deeper flavor.
  3. Assemble the Skewers: Thread marinated chicken pieces onto skewers, alternating with bell peppers and zucchini. Leave space between each piece for even cooking.
  4. Preheat the Grill: Heat your grill to medium-high (about 400°F or 200°C). If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning.
  5. Grill the Skewers: Place skewers on the grill and cook for about 10-12 minutes, turning occasionally until chicken reaches an internal temperature of 165°F (74°C) and has nice grill marks.
  6. Serve and Enjoy: Transfer skewers to plates and drizzle with any leftover marinade if desired (ensure it’s cooked first). Serve with extra lemon wedges for added zest.
