2 tbsp freshly squeezed lemon juice
1/4 cup fresh parsley, chopped

2 bell peppers (any color), cut into chunks
1 medium zucchini, sliced into thick rounds
2 tbsp low-sodium soy sauce
Instructions
Prepare the Marinade: In a bowl, combine softened butter, minced garlic, lemon juice, chopped parsley, chives, and soy sauce. Mix until well incorporated.
Marinate the Chicken: Toss the chicken pieces in the marinade until evenly coated. Cover with plastic wrap and refrigerate for at least one hour or overnight for deeper flavor.
