  • 68 ripe fresh peaches, peeled and sliced
  • ¾ cup granulated sugar (adjust to taste)
  • 1 tablespoon cinnamon
  • 2 tablespoons butter, cut into small pieces

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until dough holds together. Chill the dough for at least 30 minutes.
  3. Preheat your oven to 425°F (220°C).
  4. Roll out the chilled dough on a floured surface to fit your pie pan. Transfer it into the pan and trim excess.
  5. In a large bowl, toss sliced peaches with sugar and cinnamon until evenly coated.
  6. Pour peach filling into the prepared crust and dot with small pieces of butter.
