Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ cups warm water (110°F/43°C)
  • ½ cup granulated sugar (divided)
  • 1 tsp salt
  • ⅓ cup baking soda
  • 4 tbsp butter (melted)
  • 2 tsp ground cinnamon

Instructions

  1. Prepare the dough: In a large bowl, combine warm water and yeast. Let sit for 5 minutes until foamy. Gradually add flour, ¼ cup sugar, and salt, mixing until a soft dough forms. Knead on a floured surface for about 8 minutes until smooth.
  2. Let it rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
  3. Shape the pretzels: Punch down the dough and divide it into eight equal pieces. Roll each piece into long ropes (24 inches) and twist into pretzel shapes on parchment-lined baking sheets.
  4. Boil and bake: Preheat oven to 425°F (220°C). Boil water with baking soda in a large pot. Boil each pretzel for about 30 seconds before transferring them back to the baking sheet topped with remaining sugar.
  5. Mix cinnamon sugar: Combine cinnamon and remaining sugar in a small bowl. After baking pretzels for approximately 12 minutes or until golden brown, remove from oven, brush with melted butter, and sprinkle generously with cinnamon sugar.
