1/2 cup granulated sugar
1 tsp vanilla extract
1 large egg
8 oz cream cheese, softened
1 cup powdered sugar
1/2 cup chocolate chips (semi-sweet or dark)
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
Beat in the egg and vanilla extract until well combined.
Sift in all-purpose flour and baking soda; mix until just combined.
In another bowl, beat together cream cheese and powdered sugar until smooth.
Scoop out a tablespoon of cookie dough and flatten it slightly in your palm.
Add about a teaspoon of cheesecake filling in the center, wrapping the dough around it completely to form a ball.
Place on prepared baking sheets about two inches apart.
Bake for about 12-15 minutes or until edges are golden brown but centers remain soft.
Let cool on baking sheets for five minutes before transferring to wire racks.
