  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, mix ground chicken, ricotta cheese, minced garlic, Parmesan cheese, salt, and pepper until just combined.
  3. Form the mixture into small meatballs about one inch in diameter and place them on a lined baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. In a skillet over medium heat, melt butter with olive oil. Sauté minced garlic until fragrant then add spinach until wilted.
  6. Pour in heavy cream and stir until heated through. Gently add the baked meatballs to the sauce and coat well before serving warm.
