  • 34 boneless, skinless chicken breasts (about 1.5 pounds)
  • 3 cloves fresh garlic, minced
  • 9 no-boil lasagna noodles
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray. Season the chicken breasts with salt and pepper, then bake for about 25 minutes until cooked through. Let cool before shredding.
  2. Cook the lasagna noodles in salted boiling water according to package instructions until al dente; drain and set aside.
  3. In a saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Stir in the Alfredo sauce and Parmesan until well combined and melted.
  4. Assemble the layers: spread a thin layer of Alfredo sauce at the bottom of the baking dish, layer three noodles, half of the shredded chicken, half of the ricotta cheese, half of the spinach (if using), and one-third of the mozzarella cheese. Repeat this step once more before topping with remaining noodles and sauce.
  5. Cover with aluminum foil and bake for 30 minutes; remove foil, sprinkle remaining mozzarella on top, and bake uncovered for an additional 15 minutes until golden brown.
