  • 1 tsp baking soda

  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • For coating: 2 tbsp granulated sugar + 2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, cream of tartar, cinnamon, nutmeg, and salt in a medium bowl.
  3. In a large bowl, cream softened butter with granulated sugar and brown sugar until smooth. Add pumpkin puree, egg, and vanilla; mix well.
  4. Gradually incorporate dry ingredients until just combined.
  5. Scoop dough into balls, roll in cinnamon-sugar mixture, and place on prepared sheets.
  6. Bake for 10-12 minutes until edges are golden. Cool on sheets for five minutes before transferring to wire racks.
