  • 4 medium Yukon Gold potatoes (about 2 lbs), peeled and cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup sour cream (full-fat)
  • 4 tbsp unsalted butter, melted
  • 6 slices cooked bacon bits
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Wash and peel the potatoes, cutting them into one-inch cubes for even cooking.
  3. In a large mixing bowl, combine the shredded cheddar cheese, mozzarella cheese, sour cream, ranch seasoning mix, and melted butter until smooth.
  4. Add the cubed potatoes to the cheese mixture and stir until thoroughly coated.
  5. Spread the potato mixture in the prepared baking dish and bake for 45-50 minutes until tender and golden brown on top.
  6. Remove from oven and sprinkle with cooked bacon bits and chopped green onions before serving.
