  • 4 large eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 6 slices crispy turkey bacon
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a cast-iron skillet or an oven-safe baking dish.
  2. In the skillet over medium heat, cook the turkey bacon until crispy (about 5 minutes). Transfer to a paper towel-lined plate, reserving the grease in the pan.
  3. In a mixing bowl, whisk together eggs, milk, flour, and salt until smooth.
  4. Stir in half of the cheddar cheese and most of the crumbled bacon into the batter.
  5. Return the skillet to medium heat and melt the butter, swirling it to coat evenly.
  6. Pour the batter into the hot skillet over melted butter. Sprinkle remaining cheese and extra bacon on top.
  7. Bake for about 20 minutes until puffy and golden brown.
  8. Slice and serve hot, optionally drizzled with maple syrup or alongside fresh fruit.
